[SLL] Say, does CentOS have an accessible /etc/apt/sources.list like thing I can actually look at?

What, exactly, are you trying to do? To me your subject looks like you
are looking for the /etc/yum/repos.d/*repo files, which are the
equivelant to the apt sources files.
If you do a man yum and check the FILES section (a standard part of most
manpages) you will see:
FILES
~ /etc/yum.conf
~ /etc/yum/repos.d/
~ /etc/yum/pluginconf.d/
~ /var/cache/yum/
Each system has its pros and cons. I really don't see the benefit in
trying to start a RedHat vs. Debian flamefest. When you are used to one
system and unfamiliar with another things look difficult. But once you
wrap your brain around the new system you it makes sense.
You might also benefit from reading this:

Which isn't to mean that I'm telling you to RTFM, but a little
self-discovery can go a long way in learning a new system.
