Okay, I got this going, and here's how I did it:

ls /dev/disk/by-uuid -alh

gave me the UUID of the mount once I had it mounted.  Then I needed to 
put that uuid in the first column of fstab.  That's it.  Then the only 
problem was getting the data back, which I figured out.  Another thing I 
noticed was that the default for mkfs was not ext3, so I ended up doing 
that twice.  Perhaps ext3 would be a better default in this day and age.

Substantive comments are still welcome.  Some comments from parties who
previously have established themselves as spectacularly unhelpful and
counterproductive may not be seen by me because I just filter them for
not having the time or interest.
