We use Bacula at work, in a mixed network of Linux and MS machines.
Works fine, but we leave the daemon running. Why do you want it off? it
uses *very* little in the way of resources. 

Still, if you wanted, a cron job to start/stop it would be fine, since
the server doesn't care if it isn't there except when it tries to
contact it.
